Summer healthy breakfast: Apple blueberries oatmeal
A healthy Breakfast is a great way to start the day on a positive note, especially on the weekend when I can take my sweet time chatting with my husband. Here is one of my recipes. I usually prep the baked apples before to have a sweet snack ready in the fridge when I have a sugar snack attack.
Apple Blueberries oatmeal
INGREDIENTS (2 people)
- 2 golden apples
- 1 cup of oatmeal
- 1 cup of water
- Blueberries for topping
- Nuts for topping
- 1 tbsp of brown sugar or honey
- A pinch on salt
- Cinnamon
METHOD
Baked apples:
- Preheat oven to 350 degrees
- Cut the apples in quarters
- Put them in an oven plate and sprinkle with cinnamon
- Cook for 30 to 45 minutes depending on your quarters size
Oatmeal:
- Fill a pot with the water and bring it to a boil
- Add the oatmeal
- Bring the oatmeal to a simmer and stir often
- Add the brown sugar and salt at the end
Serve the oatmeal in a bowl and top it with the apples, then some blueberries and nuts. Add some extra honey or maple syrup if needed.
